People who have Coeliac Disease cannot eat food products containing gluten because it is a digestive disease that damages the small intestine and interferes with the absorption of nutrients from food, and if a person suffering with Coeliac or gluten intolerance consumes gluten in any form, the immune system responds as if it were toxic by either destroying or damaging the villi which lines the small intestine.
